Leek Bread
Requirements:
3 leeks
2 potatoes
2 eggs
1 cup yogurt
1/2 cup olive oil
1/2 bunch parsley
4 tablespoons white cheese
1 packet baking powder
2 cups cornmeal
Red pepper flakes
Salt
Cooking Instruction:
Wash the potatoes, boil them in water, and peel them.
Cut the leeks into small pieces.
Blend the leeks, potatoes, and parsley together, then set aside.
Reserve one egg yolk to brush on top of the bread.
In a mixing bowl, combine one whole egg and the remaining egg white, sprinkle with salt, and whisk.
Add olive oil and yogurt, continuing to whisk.
Add the blended mixture and red pepper flakes, then mix well.
Gradually add cornmeal and baking powder, preparing a batter with cake-like consistency.
Mash the white cheese with a fork and fold it into the batter.
Grease a suitable baking pan and pour in the mixture.
Brush the reserved egg yolk on top.
Bake in a preheated oven at 200°C (392°F) until the top turns golden brown.
Slice and serve warm.
