Leek Bread

Requirements:
 
  • 3 leeks
  • 2 potatoes
  • 2 eggs
  • 1 cup yogurt
  • 1/2 cup olive oil
  • 1/2 bunch parsley
  • 4 tablespoons white cheese
  • 1 packet baking powder
  • 2 cups cornmeal
  • Red pepper flakes
  • Salt

Cooking Instruction:
 
  • Wash the potatoes, boil them in water, and peel them.
  • Cut the leeks into small pieces.
  • Blend the leeks, potatoes, and parsley together, then set aside.
  • Reserve one egg yolk to brush on top of the bread.
  • In a mixing bowl, combine one whole egg and the remaining egg white, sprinkle with salt, and whisk.
  • Add olive oil and yogurt, continuing to whisk.
  • Add the blended mixture and red pepper flakes, then mix well.
  • Gradually add cornmeal and baking powder, preparing a batter with cake-like consistency.
  • Mash the white cheese with a fork and fold it into the batter.
  • Grease a suitable baking pan and pour in the mixture.
  • Brush the reserved egg yolk on top.
  • Bake in a preheated oven at 200°C (392°F) until the top turns golden brown.
  • Slice and serve warm.
