Sesame Cookie

Requirements:
 
  • 1 1/2 cups gluten-free flour
  • 1/2 cup cornmeal
  • 1 or 2 packets baking powder
  • 2 eggs
  • 1/2 cup olive oil
  • 1/2 cup strained yogurt
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon salt
  • 1 teaspoon granulated sugar

Cooking Instruction:
 
  • Sift the flours into your mixing bowl.
  • Add the baking powder and squeeze in 1-2 drops of lemon juice.
  • Add salt, sugar, eggs, yogurt, olive oil, and vinegar.
  • Mix the dough with a spoon.
  • You should get a soft dough.
  • If it sticks too much to your hands, sprinkle a very small amount of gluten-free flour to help gather the dough.
  • Roll the dough with your hands and place it on parchment paper.
  • Spread it out between 2 sheets of parchment paper and shape it with your desired cutters.
  • Place on a baking tray.
  • Sprinkle sesame seeds on top.
  • Bake in a preheated oven at 180°C (356°F) for 20 minutes.
