Sesame Cookie
Requirements:
1 1/2 cups gluten-free flour
1/2 cup cornmeal
1 or 2 packets baking powder
2 eggs
1/2 cup olive oil
1/2 cup strained yogurt
1 teaspoon apple cider vinegar
1 teaspoon salt
1 teaspoon granulated sugar
Cooking Instruction:
Sift the flours into your mixing bowl.
Add the baking powder and squeeze in 1-2 drops of lemon juice.
Add salt, sugar, eggs, yogurt, olive oil, and vinegar.
Mix the dough with a spoon.
You should get a soft dough.
If it sticks too much to your hands, sprinkle a very small amount of gluten-free flour to help gather the dough.
Roll the dough with your hands and place it on parchment paper.
Spread it out between 2 sheets of parchment paper and shape it with your desired cutters.
Place on a baking tray.
Sprinkle sesame seeds on top.
Bake in a preheated oven at 180°C (356°F) for 20 minutes.
